S’mores Cookies

Smores cookies

No matter the season or the weather, you don’t need to have a campfire to make s’mores cookies. These treats are excellent and easy to make from scratch in your oven. I sometimes eat them warm, or I give a whole batch as a mini gift exchange present.

What Are Smores Cookies?

Smores cookies are a type of dessert. They combine the best flavors from s’mores (which are typically made over a campfire) inside of a cookie base. The graham crackers, cookies and marshmallows give the cookie a sweet but familiar flavor.

These cookies are simple to make, and don’t require more than 15 minutes to mix together. 

Ingredients:

  • 3/4 cup softened butter
  • 3/4 cup white sugar
  • 3/4 cup firmly packed brown sugar
  • 2 large eggs
  • 1½   teaspoons vanilla extract
  • 2¼ cups plus 2 Tbsp. all-purpose flour
  • 1 teaspoon baking soda
  • ¾ teaspoon salt
  • 1 cup semisweet chocolate chips
  • 10 graham crackers, coarsely chopped
  • 2 bars Hershey’s chocolate, coarsely chopped (not all used at the same time)
  • 1½  cups mini marshmallows, cut into halves (not all used at the same time)
  • Parchment paper

Instructions

Preheat your oven to 350°. Beat butter, sugars, eggs and vanilla until blended. Add the flour, baking soda and salt and beat until blended. 

Stir in the graham crackers, half of the Hershey’s chocolate, chocolate chips, and 1 cup of the marshmallows, or beat them into the dough on low.

Drop by tablespoonfuls onto parchment paper-lined baking sheets. 

Bake at 350° for 6 minutes. Then quickly open the oven and sprinkle the nearly-done cookies with some of the remaining Hershey’s chocolate and marshmallows (about 1 or 2 pieces of each per cookie). Close the oven and continue cooking another 2-3 minutes, or until desired degree of doneness. Remove to wire racks to cool.

Makes about 60 cookies.
