The Best Chicken Fried Rice Recipe
Ingredients
- 6 cups of white rice, cooked (I use cold, leftover rice, but you can use fresh rice)
- 2 tablespoons soy sauce
- 1 tablespoon roasted sesame seeds
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 2 eggs
- 1 pound raw chicken, any kind, cut into bite-sized pieces
- 1 cup frozen mixed vegetables, thawed (I use a mix of carrots, peas and green beans, but you can use whatever you like)
- 2 tablespoons sesame oil
Instructions
Heat a wok or skillet over medium heat and add the sesame oil. Wait a minute or two until the oil is hot, and then add the rice. Break up the rice with a spatula if it’s all stuck together, and stir fry it around as it’s cooking.
Add the soy sauce, sesame seeds, garlic powder and onion powder to the pan and keep stir frying until the rice is warm.
Move the rice to the sides of the wok or skillet and add the chicken to the center. Stir fry it until it’s cooked through (about 5 minutes) and then mix it in with the rice.
Move the rice and chicken to the sides of the wok or skillet and add the two eggs to the center. Use the spatula to stir the eggs as if you’re scrambling them, until they’re fully cooked (about 1 minute). Add the vegetables to the pan and stir the eggs and vegetables into the fried rice. Continue stir frying for about 3 more minutes, until everything is hot. Serves four.
I serve chicken fried rice with Asian slaw, soup, bulgogi, or sometimes a steak. It’s really versatile. In fact, sometimes I eat it for breakfast!
