Every time I’ve ever gone to a Mexican restaurant, I’ve wondered how they make such delicious queso. So I began to experiment with options of how I can create a homemade version. First I tried to make it with sour cream, then evaporated milk, and it always came out with the wrong texture.
Eventually, after much trial and error, I developed a recipe that includes just five ingredients (six if you want it extra spicy!) and tastes just as good as the restaurant version.
Homemade Queso Recipe
This quick queso recipe can be whipped up in less than 10 minutes and serves the whole family for just a few bucks.
Ingredients
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups half and half
- 1 package Boursin cheese — the flavor is your choice, but I like cracked black pepper or garlic and fine herb (5.2 ounces)
- 1 cup shredded cheddar, mild or sharp, depending on your preference
- Sliced jalapenos or green onions for garnish (optional)
Instructions
In a small pot, melt the butter over medium heat and whisk in your flour until no lumps remain. Keep stirring as it cooks for about two minutes, until it begins to thicken.
Slowly stir in the half and half and continue cooking and stirring until the sauce thickens.
Once it thickens, remove from heat and, add the Boursin and cheddar cheeses. Stir well until smooth. Add the jalapenos if you’re using them, or you can pour the queso into a serving dish first and top with the jalapenos, green onions or any other topping.
Homemade Queso Dip: How to Serve It
Once you’ve made your homemade queso dip, you can serve it with nearly anything. I like to serve it hot with warm tortillas, tortilla chips, taco salad or homemade bread.
It’s also good drizzled over chicken, beef, omelets, or rice. Pretty much anything you make that needs a bit of cheesy flavor can benefit from homemade queso dip.
